Upma


Upma Making Tips


Ingredients:
1 cup rava (semolina)
4 Tbsp Oil
2 cups water
10 curry leaves
2 green chillies (whole)
3 red chillies (whole)
½ tsp black gram dal
½ tsp Bengal gram dal
1 medium-sized onion (chopped)
2 tbsp corn
tsp red chilli powder
1 tsp salt
1 tsp mustard seeds
¾ tsp sugar
Juice of 2 lemons
Few coriander leaves
Handful of cashew nuts

Method:

1. Dry-roast semolina (rava) till it simply begins to turn brown, then keep aside.
2. In a large cooking pan, heat the cooking oil. Add mustard seeds and wait for them to sputter. Then add curry leaves, slit green chillies, red chillies, soaked channa dal and split urad dal.
3. Add chopped onions and fry till they become slightly brown.
4. Add some corn, salt, red chilli powder and then add the roast rava. Stir for 1-2 minutes to let the flavours combine.

5. Then add double the water, and keep stirring properly to avoid lumps.
6. The upma is done when all the water is absorbed by the rava. Add a bit of sugar and lemon for a subtle sweet nonetheless lemony flavor.

7. Garnish with fresh coriander leaves, spruce it up with a few cashew nuts for that additional crunch, and you’re good to go.

Lemon Rice

Lemon Rice
Preparation Time: 12 - 15 Mins
Cooking Time: 5 Mins
Total Time: 17 – 20 Mins
No. of Servings: 4

Require Ingredients:
1.       1½ Table spoon Lemon Juice
2.       2½  Cup of cooked rice
3.       ½ tea spoon of mustard seeds
4.       1 table spoon of oil
5.       1 table spoon of channa dal
6.       ½ table spoon of urad dal
7.       6 to 7 curry leaves
8.       ½ table spoon of grated ginger
9.       2 dry red chillies (broken into small pieces)
10.   ½ table spoon of turmeric power
11.   Salt to taste


Preparation Method:

1.       Heat the oil in a wide non-stick pan and add the mustard seeds.
2.       When the seeds crackle, and add chana dal , urad dal and some curry               leaves and fry on a medium flame for 1 to 1 ½ min.
3.       Now add the red chilies, ginger and fry on medium flame for half minute.
4.       Add rice and turmeric powder, mix well and cook on medium flame for 2 to         3 minutes, while stirring continuously.
5.       Add the lemon juice and salt, mix well and cook on a medium fire for 2 to 3       min, while stirring occasionally.
6    6.       Wait for 2 min. Now your favourite Lemon rice is ready to serve.
